A. CLAY POT SEASONING

Remember to season your clay pots before you start cooking in them. This only needs to be done one time, before the first use. Here’s how you do it:

STEP 1  WASHING AND DRYINGCLAY POT SEASONING

1. Washing and Drying : Thoroughly rinse the pot/pan and lid under running water for a few minutes and let it sit for 10 minutes.

2. Prepare Starch Mixture : Add 3 tbsp. of flour (wheat, rice, arrowroot, lentil flour etc.) to 1 cup of water. If seasoning a large pot, make it 4 tbsp. and 1.5 cups of water. Stir thoroughly to dissolve lumps. You may also add a few drops of cooking oil and a pinch of turmeric if you please.

3. Prepare the Broth : Now fill ¼ of your pot with water, add the flour mixture, stir and heat it on a low flame on your stove for 5-7 minutes before increasing to medium heat. Cook with lid on till it thickens to a broth.

4. Cool it Over Night : Turn stove off and wait for it to cool down, preferably overnight.

5. Seasoned and Ready to Use : Next morning, pour broth out and rinse the pot with water. The cookware is ready for regular cooking!

Note : After seasoning, use the pot to cook only ‘Wet’ recipes like rice, Quinoa, vegetable soups, stews, lentils, pasta, steaming vegetables etc., for the first 4-5 times. This helps the pot to shrink slightly and become ‘fully seasoned’.Once fully seasoned you can cook both vegetarian and non-vegetarian recipes in your pots and pans.

B. COOKING WITH CLAYWARE

By following a few simple steps, you can have a pot that lasts for a long time cooking very nutritious, delicious food for you.

STEP 1  METHOD OF COOK ON STOVE TOPCLAY POT COOLING

1. Stove top : Always start on low, and slowly increase to medium if required, after 5 to 7 minutes. No need to go past medium, as all kinds of food cook perfectly well on medium heat in just about the same time. Once food gets cooking, you may find that you have to reduce back to low heat as the pot capably retains temperature within.

2. Oven : Max Temperature recommended is 450 Degrees Fahrenheit. Start in a cold oven or at 250 D F and increase to desired temperature in about 10 minutes.

3. Refrigeration : After taking out of the fridge, let the pot come to room temperature before putting it on the stove for reheating. Similarly, let pot cool down to room temperature before putting it in the refrigerator.

Tips :

Using Heat Diffuser : Always use a diffuser when slow cooking with your pot.Using a heat diffuser is recommended for all cook-tops – a must, if cooking on electric stoves (glass/ceramic) or coil cook-tops.

Using Wooden spoons is ideal for cooking in our cookware. Sit hot pots on pads, trivet or wooden board.

Darkening at the Bottom : Because of a natural oxidation process, the bottom of the pot may develop a dark grey to black hue over time. This is normal and will not affect the functioning.

C. CLAY POT CLEANING

1. Cleaning Materials : Although dishwasher safe, hand washing is recommended. They’re easy to clean, as Alfa clay is naturally non-sticky. Avoid using harmful, toxic soaps. To wash, wet the pot completely, sprinkle baking soda, scrub and rinse off. Wipe with a cotton towel/rag and put it away to dry.

2. How to Clean : Food very rarely sticks to the bottom. If you’ve accidentally overcooked or burned food, pour some warm water in the pot, sprinkle baking soda and let it sit for 10 minutes before scrubbing clean. Food will come off the bottom easily. For tough to clean spots, you can use a scrubber. As there is no coating, there is no fear of scraping any harmful enamels or glazes.

D. STORAGE AND UPKEEP

1. Storing Clay Pots : Store pots with lid open and in a well-ventilated place. Avoid storing in closed or damp areas.

STEP 2  DRYING METHODSSTORAGE AND UPKEEP

2. Drying Methods : Once every 2 months, you could dry your pots in the oven at 250 degrees or on the stove top at the lowest setting for about 10 minutes, before putting away.
If the pot needs to be put away as soon as it used, just wash it, pat dry with a cotton towel and dry it in the oven at 250 degrees Fahrenheit for 10 minutes or on the stove top for 10 minutes at the lowest setting.
